Yeah but Anakin was also once a Jedi, I think the eyes turn yellow and orange because you represent the purest form of evil. Anakin kills several Jedi and becomes extremely evil, Dooku hasn't killed anyone he's just a puppet being used by Palpatine, like he was in LOTR.
