Did you watch the dubbed version of Once Upon a Time in China?  There is a difference between the english dubbed version and the original chinese.  The movie actually makes sense in Chinese.  In the English dubbed version whole scenes are gone.  The movie is much better in Chinese.  Crouching Tiger Hidden Dragon was better when viewed in Chinese.  The english dubbed versions are bad.  Once Upon A Time In China I-IV are classics now.  They receive much more respect than Jackie's movies.  Fist of Legends is another great movie.  If you haven't seen these in their original state, then of course you didn't like it.  The movie has been cut up and hardly makes sense.
